Tonight's dinner is a home-made pizza. You can find the crust recipe here. It's a good crust, you mix it up in about 10 minutes, but then let it rise for an hour or so afterwards. so there is some prep time.
For the topping we did a Mediterranean combo:
Feta cheese - 1 cup
Romano cheese 1/2 cup
Canned artichoke hearts 7 hearts chopped into thirds
Capers - 2 tablespoons
Sliced fresh tomatoes- 2 small tomatoes
Sliced kalamata olives - 10 olives, sliced
Garlic - 3 cloves
basil sprinkled on the top to taste
Cook the pizza in a hot oven at 425 for 15 minutes once topped.
Cost of the crust was about $1, cost of the ingredients around $4, made the equivalent of a large pizza (we baked it on a standard full-sized cookie pan, so we got a rectangular pizza instead of round, but it tasted good)

I love that you're posting these! If only more people would realize that you can make delicious, good-for-you meals for the same or a fraction of the cost of convenience foods. I've been really getting into cooking lately and it just blows me away! Saving so much means I can splurge a little more on things that matter to me, too, such as humanely raised meats like the animals you raise.
BTW, thanks for the tip a while ago on the blueberry farm! The berries were amazing :)
I agree, real food is so much cheaper, and better for you! Pizza crust costs next to nothing, and is insanely easy to make, you just have to give it that time to rise.
Those toppings sound delicious!
